POLYPHENOLS WITH ANTIOXIDANT PROPERTIES ARE RESPONSIBLE FOR THE HEALTH AND ANTIMICROBIAL PROPERTIES OF TEA. IN THIS STUDY, THE PHYSICOCHEMICAL PROPERTIES OF CARBOXYMETHYL CELLULOSE (CMC) EDIBLE COATING CONTAINING COMMUNIS MYRTUS ESSENCE (CM) WERE INVESTIGATED. FIRST, THE PLANT ESSENCE WAS EXTRACTED USING A CLEVENGER DEVICE. THEN, CARBOXYMETHYL CELLULOSE WAS PREPARED WITH THREE CONCENTRATIONS OF 0.2, 0.4 AND 1% ESSENCE, AND SUBJECTED TO PHYSICOCHEMICAL TESTS (THICKNESS MEASUREMENT, WATER VAPOR PERMEATION RATE, FILM SOLUBILITY). THE RESULTS OF THE EXPERIMENTS INDICATED THAT WITH INCREASING ESSENCE UP TO 1% FILM THICKNESS, WATER VAPOR PERMEABILITY, FILM SOLUBILITY DECREASED SIGNIFICANTLY (P<0.05).
